With so many boxes of spaghetti squash in storage, I had to start eating them. After baking them, added green onion and a trader joe’s spicy red curry simmer sauce. The salad was a collection of greens again, including chickweed!

Food Wars: Episode IV – A New Quesadilla
UncategorizedThe taste is strong in this one! I got turned onto quesadillas with massive amounts of greens. Pictured are baby bok choy, brocolletes, arugula, and kale. All sauteed with onion and garlic, then layered with cheese and kimchi of course, duh. After being closed up and grilled, the sith aint got nothing on this.

Fry the eggplant:
Dip in the flour, then egg, then back in flour, throw into oil until browned.
The layers:
tomatoes sauce, then
Layer of eggplant, then
Onions and garlic and pesto, then
Mozzarella and parmesan and parsley/daikon greens, then
Layer of Eggplant, then
Tomato sauce and parmesan, then
sprinkle with Mozzarella

Couldn’t help but notice his amazing long fermented bread, which I ended up having the next night, with much butter.
Started the evening off easy with a home pita with either lamb, pepperoni, or olives and jalapeno
Dinner! Kimchi fried rice with grilled short ribs. The rice was so good, and he cooked it hot and fast, I thought it would burn but watched as he expertly moved it around the wok.
This was my plate. On top is the seaweed salad and some pickled apples and pears.

UncategorizedAre there somewhat healthier options when it comes to fast food? Maybe not “healthier” but “less unhealthy?”
The best I could do was this panda bowl. Mixed veggies on the bottom, veggie chow mein (less calories than the fried rice), topped with 2 veggie spring rolls (they didn’t have eggplant tofu, which is what I usually get).

UncategorizedThe so called ‘springer’ salmon – very fatty salmon caught at the mouth of the Columbia River, heading upstream to their spawning grounds. My hosts baked it with nothing. No salt, no oil, no herbs, and it was quite delicious. Very light and succulent.
Served with sauteed greens, asparagus, and a savory corn bread of sorts.
